« Nomi-kiri »,
it is the event of evaluating the quality of stored sake
which is in the course of maturing.
« Nomi-kuchi » is the outlet of storing tank of sake and « Kiri »
is the way to open it. So we call this event « Nomi-kiri ».
is very particular one in the domain of sake brewing, which
from ancient times that the process of brewing
sake was undeveloped, for maintaining the quality of delicate sake.
